It’s a few days past Easter and more than halfway through the week and I have yet to manage to get a meal plan done or any grocery shopping done. Last night was a serious “what’s in the kitchen” kind of night.
We’ve got plenty of ham left over. So I thought I’d put together something, that wasn’t ham sandwiches, for dinner.
Here’s what I found in the kitchen.
2 handfuls Egg noodles
1 cup sour cream
1 can cream mushroom soup
2 big handfuls diced ham
2 diced green onions
2 handfuls shredded mozzarella cheese (plus another handful on top)
sprinkle parsley flakes
2 tbsp ground mustard
salt and pepper to taste
Here’s what I did:
I cooked the egg noodles while I blended together the rest of the ingredients in a baking dish.
I used 2 tbsp of mustard ~ but would probably cut back to 1 and 1/2 next time ~ it was pretty mustardy.
When the egg noodles were done I mixed them in with the rest of the stuff. Blended it up really well so the sauce was mixed throughout the noodles.
Added a little more mozz on top of the mixture and tossed it into the oven at 350.
I cooked it for about 30 minutes or so ~ the cheese was getting brown when I pulled it out.
Let it sit for a few minutes.
What did we think?
Ryan seemed to like it. Hanna wouldn’t eat it. (but she did eat the ham out of it, and the apples she had with it). I thought it was ok. Not my favorite dish, but not bad for just tossing something together from what we had in the kitchen.
